Great tasting chives are perfect for the Summer salad season. Chives are very versatile for salads, soups, sandwiches, soft cheeses, dips, dressings, grilled meats and sour cream.
Chives are one of the ‘fine herbs’ in French cuisine and are rich in antioxidants (2094µmol TE per 100mg). Antioxidants protect the body’s cells against lifestyle conditions, working in the body to mop up free radicals, the damaging by-products released during metabolism and other physiological functions. Even in the relatively small amounts you would use in a recipe like the one below, a serving of Chives gives your diet an antioxidant boost.
Ingredients
500g ( a little more than 1lb) ram chat/small new potatoes
1 tbsp Gourmet Garden Chives
1 tbsp Gourmet Garden Parsley
1 tbsp Gourmet Garden Dill
1 tbsp olive oil (or low fat mayonnaise)
1 lemon
Pepper and salt to taste
Procedure
Serves 4-6
Step 1: Steam or microwave the potatoes until just tender.
Step 2: Remove the zest from lemon and juice the lemon.
Step 3: Combine lemon zest, lemon juice, oil (or mayonnaise) and Gourmet Garden Herbs to make a dressing.
Step 4: Toss warm potatoes in dressing. Add salt and pepper to taste. Serve warm or refrigerate and serve cold.
